L.A.’s Beard-Nominated Animal Pops Up in the Hamptons

Who knew the Hamptons would be a culinary showcase this summer? First there was the debut of Franklin Becker’s new burger, and now the enfants terribles behind L.A.’s Animal restaurant, Jon Shook and Vinny Dotolo (named Food & Wine Best New Chefs this year), will be operating a pop-up at Sole East in Montauk from August 12 to 18. They’ll be offering up dishes from Animal (nominated for a James Beard Best New Restaurant award this year) as well as, presumably, from their cookbook Two Dudes, One Pan. (We’d call Animal the Momofuku of L.A., but we’ve banned that.) Plates we hope to see: The quail fry, grits, slab bacon, chard, and maple jus; the foie gras loco moco burger with quail egg and Spam (it goes for $35 at the restaurant); and the poutine with oxtail gravy and Cheddar (by the way, the Atlantic takes a poutine tour of Montreal today). Given that the Kogi truck came here for strategic reasons, one has to wonder — are Shook and Dotolo testing the New York waters for a reason other than just fun in the sun?
