Friedman Finds New Spot for John Dory

The John Dory has a new location, Ken Friedman told the sold-out crowd at the New York Culinary Experience last weekend. He wouldn’t disclose the address, but did say it’s three times as big as the old spot. Friedman also set parameters for success for the new restaurant: “You want your monthly rent to be one to three days’ sales. One day is really good.” The former music executive likened his relationship with April Bloomfield to the Rolling Stones: “I probably won’t ever do a project without April,” he said, adding that they’d always be working on something new. “We could have made 100 Spotted Pigs. But a restaurant is like an album; you don’t want to make the same one again.”
