Recipe-Development Wars: Food52 vs. Cook’s Illustrated

Cook’s Illustrated publisher Christopher Kimball dismissed crowd-sourced recipe development last year, claiming that “only a professional test kitchen with substantial resources, strict testing protocol, and lots of time can develop the very ‘best’ recipes.” Amanda Hesser’s recipe community, Food52, accepted Kimball’s challenge. Both organizations will submit recipes for sugar cookies and roast pork shoulder to Slate on May 5, and readers will make them at home and then vote.
