Bobby (Choptank) Werhane opened dell’anima and L’Artusi. Craig Wallen cooked at Convivio and Lupa. Now the two Italophiles have teamed to create Spasso, a casual spot with an open kitchen, house wines on tap, and a menu that stands out even in this pasta-crazed age. Among the multiregional selections: fried oysters with Meyer-lemon crema and chicory, baked mozzarella cannelloni alla Norma, and roasted poussin with winter panzanella.
