David Burke — he of crackling pork shank, angry lobster, no-cal flavor sprays, and cheesecake pops — is equal parts showman and chef. Next week, at David Burke Kitchen at the James New York hotel, he gets a new subterranean stage in Soho for his outsize creations, complete with a Thomas Schlesser design, a second-story “Treehouse Bar,” and a 130-seat outdoor deck come spring.
