Williamsburg Newcomer Maison Premiere Channels Olde Absinthe House

Metromix and Eater gave us a look inside, and now Diner’s Journal has an interesting bit about the absinthe drip at Maison Premiere, the new oyster bar and cocktail den from owner Josh Boissy (Le Barricou), industrial-chic designers John and Kevin McCormick (Moto, Five Leaves, Smith & Mills), and mixologist Maxwell Britten (Freemans, Jack the Horse). Turns out it’s a painstaking replica of the one that graces the bar of the great Olde Absinthe House in New Orleans. It took three to four months to build, but the Boissy and his partner Krystof Zizka seem serious about absinthe: They plan to have the largest selection in all the land, and Britten says, “We’re in conversations about how we might create our own house absinthe.” And suddenly Fort Defiance has some company in the realm of muffulettas paired with fancy cocktails.
