Tom O’Byrne, owner of Dempsey’s and Sláinte, tells us that his new project in the former Kurve space will be called Cooper’s Craft and Kitchen, after Peter Cooper, the Cooper Union founder who at one point worked as a brewer. As previously mentioned, there’ll be a focus on craft beer, but the “Kitchen” part indicates a shift for O’Byrne: “I intend for it to be a restaurant,” he tells us. Expect an opening in July.
