A few months back, Grub reported that Nolita’s upcoming The Brewster would house a subterranean 1850s-themed “oyster saloon” as one part of their ambitious concept, and today “Page Six” confirms that Craig Hopson, who just left Le Cirque as executive chef, is at the heart of the entire endeavor. With Frank Roberts (formerly of Rose Bose Bar) and developer Ross Morgan also onboard, The Brewster is positioned to be a “restaurant and Eataly-type market” and will open next spring.
