The LES has had no shortage of restaurant openings lately, but none of them are all that healthy (deep-fried pizza?). Which is why Antibes Bistro co-owner Eyal Tov thinks the hood is ready for the Falafel Shop, a vegetarian Middle Eastern place he plans to roll out later this month. Construction is still under way at 127 Rivington, but expect a casual, order-at-the-counter joint, with nineteen seats surrounded by poured concrete floors and reclaimed wood. The opening menu will offer five sandwiches — falafel, including a green version; and the Israeli eggplant-stuffed pita called sabich — as well as five salads and freshly squeezed juices. Also a collection of classic sides like hummus, baba ghannouj, and the savory puff pastry bureka. Once this place bows in late July, it’ll be open from lunch to late-night; see the starting menu (subject to change) below.
