Damon Wise Named Chef de Cuisine at Carmellini’s Upcoming Brasserie Redo

Former Craft and current Monkey Bar chef Damon Wise will be the chef de cuisine at Andrew Carmellini’s somewhat mysterious French overhaul of the old Chinatown Brasserie space. The latter chef took to Twitter to announce Wise’s affiliation with the forthcoming restaurant, writing, “Welcome my good pal & awesome chef Damon Wise to our team at our French place on Lafayette St.” That’s not the only thing happening in AC’s world: The indefatigable chef will also lead the charge through a feast called Ham-A-Rama at Locanda Verde on Monday, October 1.
