Momofuku, Blue Hill, More Will Cut Down on Food Waste

Time to take out the trash! Mayor Bloomberg announced this afternoon that more than 100 restaurants — a range from high-end and low-end, including Cleaver Co., Chipotle, ’wichcraft, Blue Hill, Le Bernardin, Momofuku Noodle Bar, and beyond — have signed on to a new initiative designed to divert food waste away from festering landfills and into spiffy new composting efforts. “Food wastes make up about a third of our city’s total of more than 20,000 tons of daily refuse,” the mayor said.
